You beauties are in for a cookery treat this week because I joined forces with my lovely mum to prepare the most delicious cat fish pepper soup you could possibly ever taste. Honestly to me, my mum is the best cook in the world!! :)
And I actually LOVE cooking too, in fact I once considering doing so full-time and professionally. Anyways enough about me, back to the matter.
Ingredients
Meat (Chicken, Goat meat, beef, etc- It's entirely up to you)
Catfish- The more the merrier- About 2 large catfish usually should be enough :)
Seasoning (Maggi cubes, Knoor)
2 large red bell peppers
2 Large scotch bonnet peppers
Onu uzuza leaves (one handful- this is the Igbo name for it. If you don't have a clue what that is please take it written down to your local African shop)
Utazi leaves (one handful)
Ogili (1spoon full- also ask your African shop)
Crayfish (handful)
Dried fish
Coco yam flour (3 table spoons)
Boil chicken or meat and add seasoning, slice in one scotch bonnet (do not add any onions). Add a cup of water once the chicken begins to sizzle.

Leave the meat to boil or around 35 minutes stirring occasionally. Make sure the cooking heat is not too high. After that time add roughly 500ml of boiling water to the meet and allow it to simmer for 5 minutes.
Wash and clean the catfish and place to one side.

Also wash the dried fish and remove all the bones before adding it to the boiling meat.

Put your washed Utazi and Onu uzuza leaves into a blender with the scotch bonnet and the 2 cleaned and washed red bell peppers.

Also add the spoon of Ogli, the washed crayfish and one cup of water and blend till the mixture looks like what is pictured.

The soup is now nearly ready but as it is being served with pounded yam it will need to be thickened.
Use a large spoon to remove the catfish and place in a separate plate as you add the cocoyam flour to the soup. Make sure you dissolve the yam flour well with a little warm water before adding it to the soup to avoid any lumps.
